August 7th, 2026 : Prince Combo Potato

Even though I’ve been going to Shilin Night Market since I was a kid, I never knew this stall existed. I only discovered it about two years ago when I came here with a vegan friend who introduced me to their cheese potato.

Cheese potatoes are pretty common at Taiwanese night markets, but this one really stands out. What I like most is how generous they are with the cheese sauce — the entire container is filled with it, almost to the point of overflowing. The other toppings are simple but fresh. Mine came with pineapple, and the sweetness of the pineapple balanced the rich, savory cheese sauce perfectly.
