Signature Green Sichuan Pepper Beef Noodles

Unlike typical Taiwanese beef noodles, the Green Sichuan Pepper Beef Noodles (青花椒牛肉麵) have a completely different character. The first thing I noticed was the aroma of green Sichuan peppercorns, which gives the broth a refreshing fragrance and a gentle numbing sensation. What I liked is that the peppercorn flavor doesn’t overpower the beef broth.

The beef comes in large, satisfying pieces and is tender without falling apart. If you are already familiar with traditional red-braised beef noodles, I think the green Sichuan peppercorn broth is what makes this bowl particularly interesting and worth trying.
