Overview

Xiang Wei Pork (享味豚肉) is a shop specializing in pork offal dishes made from fresh Taiwanese “warm-body pork,” fresh pork that is sold and used soon after slaughter without first being frozen.

The shop is known for its signature Pork Heart Glass Noodles (豬心冬粉), which combine sliced pork heart with glass noodles and a rich pork-bone broth. Diners can also order sesame-oil preparations and garlic-tossed dishes, including a mixed plate of pork heart, liver, and kidney.

Everything is made fresh to order. Even before I found the shop, I could already smell the wonderful aroma of sesame oil from a distance

Mixed Offal in Sesame Oil

Pork offal dishes are quite difficult to find in Taipei, but in southern Taiwan, they remain a classic old-school Taiwanese food. The pork here is incredibly fresh, without any of the strong porky smell that offal can sometimes have.

Even though the soup is seasoned with sesame oil, the broth is surprisingly light and delicate rather than heavy or overly warming. Eating the different cuts of pork offal with a little soy sauce and freshly shredded ginger is such a simple combination, but the flavors and textures work incredibly well together.
