Overview
Master Liu’s Hakka Flat Noodles (劉師傅客家粄條) is a family-run Hakka eatery near Taipei Main Station. Home-style Hakka cooking can be surprisingly difficult to find in Taipei, and this shop preserves recipes and techniques passed down from the owner’s Hakka mother. Its signature Hakka Flat Noodles (客家粄條) are joined by braised pork knuckle, pork feet, handmade wontons, and other simple everyday dishes.

What I like about this restaurant is how simple and home-style everything feels. Hakka food like this is surprisingly difficult to find around Taipei, and the flavors remind me much more of something a Hakka mom would cook at home than restaurant-style Hakka cuisine.
The Hakka Rice Noodles (客家粄條) have a pleasantly chewy texture, while the braised pork knuckle (豬腳) is tender and full of savory flavor without becoming overly heavy. The pork knuckle is much more commonly found in southern Taiwan and can be surprisingly difficult to find in Taipei, where everyday pork dishes usually use more conventional cuts. The ingredients are fresh, the portions are satisfying, and the prices are very reasonable for Taipei.
My favorite part is the noodles. They use wide, chewy noodles with a really satisfying bite. The savory meat sauce and subtle numbing sensation from the Sichuan peppercorns work especially well with the thick noodles. It’s simple, flavorful, and incredibly satisfying.
