Overview
Originating from Kyoto’s renowned Ichijoji Ramen Street, Butanchu specializes in Kyoto-style rich tonkotsu-shoyu ramen. The restaurant serves house-made noodles and lets diners customize the broth richness, seasoning, garlic level, and noodle type to create their ideal bowl. Its rich pork bone and soy sauce broth delivers an authentic taste of Kyoto in the heart of Taipei.
Bonus : the shop has three adorable tabby cats that often patrol the dining area — and don’t be surprised if one quietly sits behind you, watching you enjoy your ramen.

June 3, 2026 : Tonkotsu-Shoyu Ramen (Rich Series – Rich Salt – Thin Straight Noodles)
The ramen is generously topped with chopped green onions, crunchy bean sprouts, bamboo shoots, three slices of chashu, and half a soft-boiled, lightly caramelized egg, giving it an irresistibly savory appearance.
Even though I opted for the Light Series broth. The broth is still packed with deep pork and soy sauce flavors without feeling overly greasy. I chose the thin noodles, and their firm bite paired wonderfully with the crisp bean sprouts, creating a pleasant contrast in texture. If one serving isn’t enough, you can also order an extra portion of noodles and choose from any of the three noodle types for your refill.
