March 21st, 2026 : Beef Brisket Noodles
Many people don’t realize that the beef noodles Taiwanese people enjoy today were originally created in the 1960s by Muslim veterans from China’s northwestern region. The noodles served here are much closer to that original Muslim beef noodle soup created in the 60’s.
Because of Islamic dietary traditions, the broth is prepared as a clear, slow-simmered stock made primarily from beef bones, beef offal, and a small amount of natural spices. The soup broth also contains no rice wine — a common seasoning in Taiwanese cooking — and doesn’t rely on spicy doubanjiang (fermented chili bean paste) to mask the flavor of the beef. As a result, the broth may appear light at first glance, but each sip reveals remarkable depth.
