
Overview
Ming Xing Zha Jiang Mian (明星炸醬麵) is a noodle shop on the second floor food court of Nanmen Market in Taipei. The owner grew up around Nanmen Market, where his family worked, and eventually opened his own noodle shop because of his love for Zha Jiang Mian (炸醬麵).
The shop’s signature Zha Jiang Mian is a dry noodle dish topped with the owner’s homemade fried sauce, made with scallions and dried tofu. The noodles are also served with vegetables and other toppings, making it a filling and satisfying meal. Many of the ingredients are carefully prepared and cut by hand. Besides Zha Jiang Mian, the shop is also known for other items such as Saozi Noodles (哨子麵), Da Lu Mian (大滷麵) and dumplings.

How to Order
The shop is located in the food court :
(1) First, find an available seat in the food court. You can leave your belongings at the table to save your seat.
(2) Go to the shop counter and place the order
(3) Pay right away at the counter when you order
(4) Once the order is complete. The staff will give you a pager and an order slip
(5) When the pager beeps, return to the counter to pick up your food. Hand the pager and order slip back to the staff.
(6) When you’re finished, return your tray to the designated tray return area.

The restaurant offers a choice of two noodle types : thin noodles (細拉麵) or wide noodles (寬拉麵). When it comes to dry noodle dishes in Taiwan, I recommend the chewy, thick noodles.

This is what the noodles look like when they’re served. Be sure to stir everything together well with your chopsticks so the minced meat and sauce are evenly coated throughout the noodles.

August 5th, 2026 : Sao Zi Noodles (Thick Noodles)
The highlight of this bowl is undoubtedly the noodles. I recommend choosing the wide noodles, as they have an exceptionally chewy texture that pairs beautifully with the savory saozi sauce.
Although the menu labels it as mildly spicy, I found it not spicy at all, making it an easy dish for anyone to enjoy. If you’d like a bit more spicy , the restaurant provides complimentary spicy doubanjiang (chili bean paste) and spicy dried anchovies at the counter.
