
Overview
Ahe Hey Thin Noodles (阿輝麵線) is a third-generation street-food shop at Shilin Night Market in Taipei. Pork Intestine mianxian (大腸麵線) is a Taiwanese dish of thin wheat vermicelli served in a thickened, savory broth with braised pork intestines or fresh oyster.
The stall was founded by the current owner’s grandmother in 1980. It originally sold dan zai noodles (擔仔麵) and tempura (甜不辣). Today, the stall is especially known for its three-treasure mianxian (三寶麵線) (listed as “Oyster / Pig Intestine / Squid Noodle Soup”), made with pork intestines, oysters, and squid. The dish earned repeated recognition from the Michelin Guide from 2018 to 2021.

There is another stall with the exact same name right by the temple. Both locations are owned by the same owner — the main shop has indoor seating, while the other location is a traditional street-food stall

Because the shop is frequently visited by foreign tourists, it now uses a self-service kiosk to make ordering easier

Their dining area is very simple but clean. One interesting detail is that they use old desks and chairs retired from Taiwanese junior middle schools

Pork Intestine Noodles Soup
Pork intestine mianxian (大腸麵線) is actually one of the Taiwanese foods I eat the least. I’m from southern Taiwan, where mianxian broth is usually thicker and slightly sweeter.
This bowl was quite different. The broth was lighter and less thick, but the aroma of the braised pork intestines really stood out. Their rich, savory aroma spread throughout the entire bowl, giving the mianxian plenty of flavor without making the broth feel too heavy.
