This is one of the most popular stalls at Shilin Night Market, and there is always a line. Waiting 30 mins – 40 mins for a fried chicken cutlet is completely normal

Unlike a typical Taiwanese chicken cutlet, which is known for its crispy exterior, this one is grilled immediately after being deep-fried, so the coating is not quite as crispy. The highlight, however, is the stall’s secret house sauce. As the sauce cooks over the charcoal together with the chicken, it develops a sweet and tangy aroma, giving the chicken a delicious balance of savory and sweet flavors.
