Sweet potato balls (地瓜球) are a common snack at Taiwanese night markets. Although they may look simple to make, making really good ones actually takes mad skill

When I walked past this stall, I noticed the owner pressing and shaping the sweet potato balls fresh on the spot. This is actually quite rare at Taiwanese night markets, since many stalls use sweet potato balls that have been prepared and frozen in advance. Because these are freshly pressed and fried right away, they have a noticeably chewier and bouncier texture than ones made from previously frozen sweet potato balls

Sweet potato balls are the kind of snack that taste best when freshly fried. Some night market stalls fry them in advance and simply wait for customers to buy them

I liked them so much that I bought a large bag of sweet potato balls that same day and brought them to my friend’s house to share with them

Sweet Potato Balls (Original)

Sweet potato balls (地瓜球) are a snack you can find at almost every night market in Taiwan. They are relatively simple to make and have good profit margins, so they are a popular choice for people starting a night market stall.

However, the simpler the food, the harder it is to make it stand out. There is nothing fancy about the sweet potato balls here, but what makes them special is that they are made fresh and fried to order. That alone gives them a much better texture and overall quality than many stalls that take shortcuts by using pre-made or previously frozen sweet potato balls.
