Hai You Pork Ribs (海友十全排骨) is a shop at the Shilin Night Market with 56 years of history. Its specialty is herbal pork rib soup (藥燉排骨), a Taiwanese medicinal soup that slowly simmers pork ribs with Chinese herbs.

Its distinctive herbal broth has attracted numerous celebrities and overseas visitors over the years, while the walls are covered with photographs, awards, and media appearances. The shop has also been featured repeatedly on Taiwanese television and was previously recognized by the Michelin Guide.

Although herbal pork rib soup (藥燉排骨) is a seasonal dish in Taiwan and especially popular during the winter months, I visited in the middle of summer and the shop was still completely packed

Herbal pork rib soup (藥燉排骨) is actually a very simple dish — it is basically just pork ribs and herbal broth. But the broth here is wonderfully mild and naturally sweet, without the heavy herbal flavor that can make you feel overheated.

Even on a hot summer day, I still wanted to finish every last drop of the steaming soup. The pork ribs were also cooked just right. The meat had absorbed plenty of flavor and was tender without being overly soft, while still having a satisfying texture. It was absolutely delicious.
