Tendon & Beef Knife-Cut Noodles
Unlike typical Taiwanese beef noodles, which usually have a rich yet mellow broth, the broth here feels more like Chinese-style beef noodles, where the soup plays more of a supporting role and the real focus is on the noodles and beef.
Their freshly made Knife-Cut Noodles (刀削麵) are wonderfully springy, with a firm and satisfyingly chewy texture. The portions of beef and beef tendon are also very generous, with large, substantial pieces in every bowl. The combination of chewy noodles and big chunks of tender beef and tendon makes this an incredibly satisfying bowl of beef noodles.
